- SHRIMP AND MUSHROOM SAUTÉ POLONAISE

- 7-5 Shrimp - peeled & deveined
- 2 1/2 oz.. Mushrooms - sliced
- Drawn butter - enough to coat bottom of pan
- 1 Tbl. Olive oil
- 1 Tbl. Shallots - diced
- 2 Tbls. Parsley - chopped
- 1/2 Oz. Dry sherry
- Dash Pepper
- Dash Paprika
- 1/3 Cup sour cream

- Coat pan with just enough butter to cover, add olive oil and sauté shallots for two minutes. Add mushrooms and sauté until about halfway done. Add parsley and sherry and let come to boiling point. Add shrimp and cook until almost done; add pepper and paprika. Stir in sour cream and heat thoroughly but do not boil!! Serve on a dinner plate and garnish top with a little chopped parsley.
